While at sea over the 4th of July weekend on our cruise to the Bahamas, there’s always a million food options to choose from. Luckily for me, I’m very consistent and always had eggs benedict for breakfast. I would remove the english muffin and have the egg with ham and a side of avocado and turkey bacon. Now that I’m on land, I’m missing it. So I decided to make my own version.
Here’s how to do it:
4 egg whites
1 tsp of baking powder
1/4 cup water (or unflavored almond milk)
1 tsp of coconut oil
4 tbsp of Bob’s Red Mill protein and fiber powder
Mix into creamy batter, it shouldn’t be too thick or too thin. Add water last and add more if you need it. Stir batter and pour over hot waffle iron (on Amazon for $15.) Serve and cut a hole in the middle of it.
Pour one egg over heated pan and break open cautiously. Let sit for about 1 min and serve on plate. Place unflavored waffle over the egg and sprinkle Everything But The Bagel seasoning and salt to taste add butter or other toppings you see fit- just forgetting the avocado mash!
