Broccoli Guacamole and Low Carb Tortilla Chips

Since living a low-carb, high-fiber lifestyle, chips & guac have always been a catch-22. There’s a ton of fiber in guacamole, BUT the chips are higher in carbs. I thought about making chips from scratch and then an easier way dawned on me. I realized that I could use Mission Wraps that I eat on a daily basis. All I had to do was slice with my pizza cutter, season and bake! They are THE perfect alternative if you want to stay low-carb and not give up having a salty snack.

Did you know you can buy a food processor on Amazon for less than $30! I can’t wait to try to make different guacs, sauces, and energy bites with this! For now, here’s how to make a great light broccoli guac for the Mission Wrap high fiber chips:

Ingredients

  • Mission Wraps (small that are 5g net carbs each)
  • 2 ripe avocados
  • 1 head of broccoli
  • 1 tomato
  • 1 red onion
  • 1 lime
  • Himalayan salt
  • Garlic salt

  • Take pizza cutter and slice up each seasoned wrap into 8 pieces
  • Cover baking sheet with aluminum foil and place mini chips on sheet
  • Place in oven for 5 minutes, take out, flip each chip, and bake for another 5
  • If you like them on the softer side, keep in for 8 minutes instead of 10 total!

Guacamole:

  1. Take 2 avocados, peel open, remove pit and scoop into processor
  2. Dice 1 head of broccoli into small pieces
  3. Dice 1/2 tomato into small pieces
  4. Dice 1/4 red onion into small pieces
  5. Place all ingredients into food processor
  6. Cut 1/2 lime and use lemon squeezer to add juice to process
  7. Salt and add seasoning to your liking
  8. Blend and scoop out to serve
